A journey through oak influence on peated Whiskies
Unlike casual tastings, this one was approached with a clear objective:
"to explore how different cask types influence whisky character,
across distilleries and styles."
This tasting marked one of my first attempts at analysing whisky through a more comparative, almost academic lens, focusing not just on flavour, but on cause and effect.

Selected Whiskies & Observations
Kilchoman Sauternes Cask
Cask: Sauternes barriques - Sweet white wine from Bordeaux (botrytized grapes).
Honeyed fruit, vanilla cream, and a soft maritime smoke.
A rounded profile where sweetness integrates gently with peat.
Kilchoman Fino Sherry Cask
Cask: Fino sherry butts - Dry sherry aged under flor.
Green apple, citrus, toasted almond, and a firmer peat structure.
Notably dry and precise, with a crisp, mineral edge.
Laphroaig Sherry Oak Finish
Cask: Ex-bourbon with Oloroso sherry finish - Oxidatively aged dry sherry, often sweetened with PX.
Iodine, smoked meat, and cherry sweetness, supported by warming spice.
A classic interplay of medicinal peat and rich sherry influence.
Talisker Distillers Edition
Cask: Amoroso sherry finish - Sweetened Oloroso (blend of Oloroso and PX or Moscatel).
Pepper, sea spray, and dried fruit, with an elegant, integrated smoke.
Balanced and structured, with a refined maritime character.
Bowmore 16 Ruby Port Finish
Cask: Ruby port barriques - Young, fruity fortified wine aged in short oak.
Blackcurrant, fig, and chocolate layered over Bowmore’s floral peat.
A more expressive, fruit-forward interpretation.
Lagavulin Jazz Festival 2015 Edition
Cask: American oak and European oak bodega sherry casks - Mature sherry casks used in Spanish bodegas (often decades old)
Deep peat, espresso, tobacco, black pepper, and charred wood.
Dense, complex, and highly structured, arguably the most intense of this flight.
